Guest Post // Cappuccino Cake Recipe

Hey everyone! I'm Caitalin. Today I'm guest posting for the lovely Jess! 

If you haven't figured it out already then I am going to be doing a recipe post for you all today. Just a heads up...all you coffee addicts like me out there will love me after this post!


Cappuccino cake (AKA heaven!)
Ingredients:
- 250g softened butter, plus extra for greasing
- 280g self-raising flour
- 250g golden caster sugar
- half tsp baking power
- 4 eggs
- 150ml pot of natural yoghurt
- 1 tsp vanilla extract
- 1 tbsp cocoa powder, plus extra to dust
- 100ml strong coffee (i make it with 2 tbsp of coffee granules)

For the icing:
- 140g icing sugar,sifted
- 350g mascarpone or soft cheese


Method
1.Heat oven to 180C/160C fan/gas 4. Grease a 20 x 30cm baking or roasting tin and line with baking parchment. 

2. To make the cake batter beat the butter, flour, baking powder, sugar, eggs, yoghurt, vanilla, cocoa and HALF of the coffee in a large bowl with an electric wisk (or if your like me, by hand) until no lumps are in the mixture.

3. Spoon into the tin and bake in the over for 25-30 minutes. The sponge should have risen and be golden brown. If you still not sure, here is a tip: poke a skewer through the middle..if it comes out clean, its done! Drizzle with some of the remaining coffee.

4. Cool in the tin whilst you mix the icing sugar with the mascarpone. Spread this over the cooled cake and dust with some cocoa powder and if your creative, which im not...sprinkle over some coffee beans to make it look all cute!


So that's it! Pretty easy huh?
I bake this all the time when i want a nice kick of caffeine that's not in a mug!
